First Birthday "Cake"

I am trying to put together a list of options for healthy "cakes" to serve Serenity on her first birthday.  If you have any ideas, please share. I think I served Julian a fruit pastery.

Here is the list I have compiled so far.  BTW-the older (non-baby) of the guests will have the sugary cakes we all enjoy eating at birthday parties.
Pumpkin Apple Harvest Cake

INGREDIENTS

1 cup cooked or canned pumpkin puree
2 large eggs, beaten
3/4 cup organic sugar
3/4 cup unbleached all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup chopped apple
1/2 cup chopped walnuts or pecans
Whipped cream or confectioners’ sugar for topping (optional)

1. Preheat oven to 325F. Prepare an 8-inch round cake pan by greasing and flouring it.
2. Combine pumpkin, eggs, and sugar in a large mixing bowl. Add flour, cinnamon, baking powder, ginger, and salt, stirring to combine. Add apples and nuts, stirring again. Pour mixture into prepared pan.
3. Bake 20 to 25 minutes, until a cake tester inserted in the middle comes out clean.
4. Cool the cake, still in the pan, on a wire rack for 10 minutes, then invert the cake onto the rack, remove pan, and cool cake completely.
5. When ready to serve, turn cake on to a pretty plate and top with whipped cream or confectioners’ sugar, if desired, or serve plain.

ps. If you make the cake, smooth it out when you put it in the pan as pumkin makes it bake in whatever shape it goes in there with.  Guests loved the cake, BabyG did...I frosted it by whipping heavy cream with a little sugar and cream cheese.

sounds really good! Baby's 1st b-day I take it?

It sounds delicious...I have one question, though. This recipe uses nuts. The pediatricians my kids and grandkids have been to wouldn't let us give the kids nuts until they were two in case of allergies. But if it isn't a problem with your doctor, then I would stop looking right now...because that recipe has my stomache rumbling....mmmm. When is her birthday??

no nuts will be used in the making of this fil...um, cake. I'd prefer not to use sugar.
Her first b-day is the beginning of September.

You could make a zucchini cake with some whipped cream frosting or a small tort maybe? I'm a fan of charlottes, but I doubt they're any healthier than cake...I may be no help at all in this front...!

Apple Frangipane Galettes are really yummy too. The recipe (found here: http://www.bobsredmill.com/recipes_detail.php?rid=1060) says it makes 4 galettes, but I found that I can make about 16 with a complete package of frozen puff pastry using a small, single serving pie tin (about 3-4 inches in diameter) as a size guide. It makes them about 200 calories a piece and they're plenty big enough at that smaller size. :)

Oh...But nevermind on the galettes...I wasn't thinking about it when I posted that, but they're made using almond flour in the filling. There's only about a teaspoon or so in each, but if anyone is allergic that is more than enough to set of a reaction! I'd say hold onto this one for later use, as they are super yummy. Sorry!!

Thank you for the wonderful ideas! I like the zuchinni bread suggestion. I think that would work out quite nicely!
I need to check out that site, however, I would not have any recipes to add, I don't do much cooking, or baking.
