I went for this large cake pan since it's the largest I could find. This pan can hold 2 medium sized porgy, snapper or sea bass, about 4lbs worth of fish. It's easy to season the fish with salt, garlic, olive oil, etc. in this pan, and then it can go right in the oven at 400 or even 450F. Then there's plenty of space left to put in vegetables 10-15 minutes before the fish is done. (BTW the fish takes about 30 min at 425F. I found that slightly higher temperature is needed to cook fish in the same time in this pan, compared to parchment paper. Smaller fish cook a little faster, so I use more like 400F.) It is a bit floppy for this application, but it still works well. Unlike metal or glass pan, this thing is really easy to clean since things don't stick to it. It also doesn't absorb smell no matter how much garlic, shallots, tomatoes and a lot of other things are cooked in it, with lots of oil.
