Feel like eating Italian osso buco without the bother of rice, pasta or plates? Make the meaty veal stew in an hour and 15 minutes, and then spoon it into a warmed flour tortilla, sprinkle with a little lemon-parsley gremolata, and eat it out of hand. Her influence helped infuse menus all over the U.S. with dishes rooted in Mediterranean cooking, often with a sunny, California twist. Dishes at the casual café, located upstairs in the same enchanting house as Chez Panisse, her more formal restaurant in Berkeley, California, include Wood Oven Baked Porcini Mushrooms, Tuna Confit, and Meyer Lemon Éclairs. Waters suggests making the mushrooms in your fireplace if you can, although recipe directions are for a conventional oven. Typical of the ingredient-driven cooking Waters encourages, the stunning tang of the éclairs requires Meyer lemons: a cross between a lemon and an orange, which are now exported beyond their native California. `Rick Bayless's Mexican Kitchen' is restaurateur / PBS show host Rick Bayless' second major book on Mexican cuisine in cooperation with his wife, Deann Groen Bayless, and the first with collaborator, JeanMarie Brownson. The primary point of view which distinguishes this book from both his earlier `Authentic Mexican' book and his later PBS tie-in, `Mexico, One Plate at a Time' is that it deconstructs major aspects of Mexican dishes by breaking them down into `Essential' recipes and recipes which use these essential preparations as an ingredient. This has a lot in common with Ming Tsai's technique in his latest book, `Simply Ming', with the difference that while many of Ming Tsai's preparations were of his own devising, Senor Bayless is presenting us with the fact that the Mexican cuisine by its very nature, lends itself to this `modularization'. Once again, Douglas Rodriguez surprises us with an excellent recopilation of recipes that expresses this genius's of Latino Cuisine interpretation of Ceviche. Only a Chef with a passion, love, and respect for his latin roots and the gift of creativity would end up with a magnificent cookbook such as this one. The only thing I regret about this book is the narrow paperback format in which it is presented, which makes it a little uncomfortable to read, but it contains several beautiful pictures consistent with all of his previous publications.
