Just made it and it's gotta go in the fridge overnight so I wont know if this is the "best pizza dough ever" until tomorrow. Hopefully its good because I'm having company over tomorrow...

How did this come out??

It was really good! Nice and thin and crispy! The quanities for the flour and water were perfect. I found the crust turned out better when I put it in the oven for about 2 minutes before I put the toppings on.... We did load up the toppings though, so I'm sure it wouldnt be necessary if you were light on the toppings like the picture. I will definitely make it again.

Thanks!! I'm glad it came out well. I like to load up on toppings too, so that is really helpful. Did you put it on a stone or a pan, or just on the rack in the oven? My stone cracked and I never replaced it, I just bake them on the rack now.

My stone cracked too and I still haven't replaced it, so I cooked the pizza on one of those round perforated aluminum pizza pans.

Ok, thanks. I put them on a baking sheet for awhile, but I read somewhere if you don't have a stone to just put them on the rack instead of a pan for the best crust, so I've been doing that. But yours turned out great, so... :)

I read that somewhere too, but I haven't figured out how to transfer the somewhat still uncooked dough with toppings on it to the oven rack without it falling apart and without the dough like...dripping through the wire rack. How do you do it?

I put it on an upside down baking sheet (I have a big one) and slide it off of there onto the oven rack. Put some flour on the pan first so the dough doesn't stick. I never had an issue with the dough dripping through the rack though. You must make your crust *really* thin. :)

Quick and healthy, although not the best rice and beans I've ever made. The stewed tomatoes made them kind of sweet. I usually add canned diced tomatoes to mine and i think i prefer them over stewed.

I made these for thanksgiving. They were pretty good. My fiance loved the cayenne in them. I used a star and turkey shaped cookie cutters to cut them out, which made them look really festive. Because they had sweet potato in them, they were a bit denser then normal biscuits. Some kind of complementary jam would have been good to serve them with.

Delicious, although I altered it a little. Didn't use bacon. I was craving something light and healthy, so the bacon sounded pointless (although good i'm sure). I put the chipotle peppers & adobo sauce in the food processor along with 4 (small) cloves of garlic, a tablespoon of oilive oil, and a few pinches of cumin and sea salt. I used raw shrimp and let it marinate in the chipotle mixture for about 20 minutes and then sauteed it on medium high heat until the ship was cooked. Served with shredded lettuce, diced tomatoes, shredded monterey jack cheese, avocados, sour cream, hot sauce, lime wedges and salsa (so we could pick and choose what toppings we wanted). The chipotle mixture on the shrimp was to die for. I want to make the mixture again but use it on jumbo shrimp, put them on skewers and grill them.

Sounds seriously yummy! And I love your idea of using jumbo shrimp and then grilling them. A girl after my own heart. :)

I tested this out two weekends ago. I followed it exactly except I used turkey bacon instead of regular bacon. THIS WAS SOOOO GOOD! I'm making it for Thanksgiving at my (soon to be) Mother in-laws house. I might use turkey sausage instead of bacon though.

this looks incredibly good. i really dont like cucumbers, but im sure it would taste fine without it.

cilantro is a good alternative. let us know how it turns out. the peanut sauce sounds delicious.

Grilled Polenta is awesome. I love that you can throw anything in it. I've made it with chipotle puree and red pepper flakes, sun dried tomatoes & basil, garlic and parmesan....I've also topped with it tomatoes and a basil pesto. Its a great crowd pleaser recipe. I think I'll make this one tomorrow.

i love mexican tamales. i think they are hard to make though..

I know....I've been researching them all morning for recipes and techniques. I think the boy and I are going to stay in tomorrow evening and attempt to make some. Hopefully they turn out okay!

that sounds nice. :] im trying to look too. what kind are you going to make? tamale verdes are so good. ive had chicken and also pork. its kind of spicy but i love it! im getting annoyed because im trying to look too, and if you type in mexican recipes, its coming up like "taco salad" ahhh!!! not authentic at all. hah.

I used this recipe when I made mine. They weren't that hard to make, just time consuming. : )

When we made them, we mixed the chicken and pork together and added some additional heat to about half of them. It seriously makes a TON of tamales (I think we got well over 70!). But they were really yummy.

@gregsgal - thank you for the link! And holy crap, it made 70 of them? I also have an authentic Mexican cookbook that has proved to be an awesome source for awesome tasting traditional Mexican dishes. There is a whole chapter on Tamales! @cupcakexo - I haven't decided what kind i'm going to make. I might just go all out and make a few different kinds and just freeze the leftovers because I read they freeze well. I know i want to make the "Tamales de Pollo y Salsa Verde" and maybe some kind of American fusion concoction of shrimp, roasted corn, garlic and peppers? My main problem I;m going to face is that fiance wont eat anything with oil/butter/lard in it, so I;m going to have to be sneaky and try to get some fat in there somehow!

Yeah, that recipe seriously makes so many! We filled two of those pasta pots they pictued in the "tools for making tamales" section on the site. Luckily, they do freeze well. : )

I love to cook and can take half a day making a pot of chili and have made egg rolls from scratch, but these are seriously time consuming. Two days? I don't think I've ever made something that took two days.

The only reason it takes two days is because they have you cook all the meat the day before so it's cool to handle. You could probably do it in the morning and then get everything else ready. Once it's cool enough to handle, you can start. We did the two day method, but it was because we were planning to make a bunch of freezer meals that day (with my mom and sister) in addition to the tamales (chicken enchiladas, pot pies, and lasagna). It was a lot of fun and we had TONS of food!

Oh, also, I followed the directions, but found that I had about half of meat left but was out of the masa dough, so we made a second batch of it (the spicier ones were made using this second batch). When I finally get around to making them again, I'd put more meat in them so there's more in each tamale. My first ones were a bit light on the meat. We also liked the spicier ones more, so in the future, I'd make all of them spicier.

I'm thinking that's way too much work for one person. I'd have to have a cooking party, which is always a fun time. :) But I'm thinking it's also more of a Winter thing when we can't be outside. Have to keep that in mind.

I made them all by myself (well, I had help with the lasagne, but that's because it was for my sister. I didn't make any for myself). I even made the crust for the pot pies and filled/rolled all the tamales all by my lonesome. We just gathered at my mom's and made a day of it so it was a bit more fun than making all these things at your house alone. : )

Your just a domestic little cooking machine. :) I don't usually make crusts and that kind of stuff. There's a lot of decent off the shelf products now that I can live with. There are just some things, like baking, that I don't have much patience for. I don't know why, but I guess because baking is fussy where the ingredients have to be precise, and cooking I don't have to measure much, I just toss in what I want. :)

@lamerchick, love your way of thinking about cooking. im actually more into baking because i mess up everything i cook. [since you really dont have to measure.] my sister is such a good cook. im always amazed at the things she can come up with. even with the littlest of ingredients, she can come up with something! i think thats why i appreciate this list. :]

Grrr, speaking of typos...Your ^ should be You're. I hate when I do that. Makes me feel so stupid.@cupcakexo: That's one of things I enjoy about cooking is taking a recipe and making it your own. It's hard to do that with baking...at least for me. I have notes all over recipes of things I've added or changed. and yeah, it's really easy to come up with something out of not much at all when you need to. I should do a list like hophead with some things I make and what I did to it. I like her idea very much and like reading her comments. Yeah, where do I find the time for that?

@lamerchick, it would be soo cool if you could do that too. just one day when you have extra free time, you should start one up! we'd love to hear what you've done. :)

This was one of my favorite recipies I've ever made. The combo was just perfect and it looked really nice plated.

Orzo Salad with Feta...

Bring a large pot of water to a boil. Cook orzo according to package directions. Drain and toss with spinach leaves (the heat from the pasta will wilt the spinach). In a large bowl, combine all ingredients. Toss and serve.

Made this Friday night and it was excellent and quick. I did add a 15 ounce can of diced tomatoes, up-ed the shrimp to 2 pounds, and added twice an many green onions.

Mmm. I may make this this week.

Made this really quickly with a bag of pre shredded coleslaw mix. Added three finely chopped serrano peppers to it. Used it to top off some smoked pulled pork sandwiches with hot Chile sauce. Fantastic combo and this coleslaw is sooo much healthier than the mayo laden one. It's quite good on it's own too if you like the flavor of fresh hot peppers.

These were SOOOOO good! I made my own Tomatillo sauce, which is pretty similar only I also roast 3 jalapenos with the rest of the veggies. I do not add lime or lemon juice, but instead add some fresh cilantro, extra virgin olive oil, a tiny bit of cumin and a pinch of salt to the food processor along with the roasted veggies (seriously, best sauce ever). I also added panko crumbs to the flour for breading (did a half and half mixture). I highly recommend that alternation.

Added shredded chicken to the filling and made a traditional enchilada sauce instead of the one in the recipe. Also added a few extra pinches of cinnamon to the sauce to compliment the sweet potatoes. It was Delicious and perfect for fall.

I actually used soba noodles because I had some in the pantry so I also didn't use the oriental season packet since I didn't buy any ramon noodles. Instead of threw in some sesame oil and soy sauce. It was really good and also really pretty looking on the plate.

Neither my fiance or I liked the hoisin sauce so we omitted it from the wraps after eating one each with it in it. These were good and filling and super healthy. I mean you have a lot of your major food groups in these little wraps. I think they do need some kind of other sauce in them. Not sure what kind, maybe a black bean garlic sauce or something.

I kind of changed this into a tamale meatloaf. I used extra lean ground turkey instead of beef, and added fresh corn to the meat mixture. I topped it with tamale mesa instead of corn bread mix. It was really really good. Next time I am going to add the fresh corn to the mesa mix instead. I'm going to add some black beans to the meat mixture, and then make a tomatillo sauce to put on top of it instead of using salsa.

So, I didn't tell you. I made that slaw with some sausages and the most delicious mustard ever... It was a hit, she loved it!! :-DI made her more before I left.I just did cabbage, celery, green apple, tiny bit of mayo, lemon juice, and pepper. Easy peasy.
