The classic French mandoline slices vegetables, fruit and cheese quickly and more accurately than electric food processors. This one is made by the French company Bron Coucke, and was recently highly rated by the magazine Cook's Illustrated. Virtually all stainless steel, it comes with one main cutting blade that is infinitely adjustable for thickness of cut, and four julienne (or transverse) blades to further cut material into strips of 2, 4, 7 or 10mm — perfect for making pommes pailles or French fries.
