The book is profusely cross-referenced and illustrated in black and white. There is an Engish-Japanese glossary at the back and seventeen appendices covering key items such as katsuobushi, miso, Buddhist vegetarian cuisine and so on in greater detail. (11/21/07) Before I became entranced by Japanese cuisine I had no idea how much pickles were a part of the experience. Since I've begun my education into Japanese food, I have been stunned by the sheer variety of tsukemono. I made one of the quick cabbage pickles, which took about twenty minutes to have the best crisp, salty pickled cabbage I have ever eaten. I stood in the kitchen and ate it all! It was so delicious that I set about to make as many pickles as I could from the book. All of them have been successful and tasty. I have impressed friends and family with my tsukemono - we eat them with everything - not just Japanese food. They make great accompaniment to picnic food and are perfect for bento box lunches. This full color book is exquisite with photos for every recipe and photos on preparation too. I am so happy this was my first book on tsukemono, I am addicted! Not content to merely compile a series of recipes, Shizuo Tsuji adds descriptions of cooking techniques unique to Japanese food, insight into Japanese culture, and more importantly he imparts valuable knowledge on how to understand and appreciate Japanese cuisine. He divides the book into two parts. The first part begins with a discussion on how meals are prepared and composed. Then he explains ingredients, tools, and techniques that are frequently used in the book. He ends part one with recipes that are intended to be a basic introduction to various types of Japanese food (each "type" employs different methods of preparation and cooking, such as frying, steaming, etc.) The recipes are traditional Japanese meals that you would encounter if you went to Japan. However, as the other reviewers have mentioned, this is not necessarily a Japanese cookbook, and the recipes are not of the sort I was looking for, meaning meals to be packed into a bento box and taken for lunch. I bought it via an online auction site for less than half the going price, including shipping, and I feel that it is definitely worth that, but absolutely no more. One very nice part of the book, however, is that it groups foods together by menu, and gives you a good idea of what contrasts with, or works well with other foods. Very interesting. Enjoy!
