(08/30/10) i think i would call these a cookie rather than a candy, but that's just a personal opinion. whatever you call them, they're quite tasty for coconut lovers and non-coconut-lovers alike. i toasted the coconut a bit to keep it from being stringy, and was very happy with the results. also, i added a little extra chocolate on top--but probably a little too much. i advise moderation to maintain an appropriate balance among the layers.See less

(11/04/10) Last weekend was my 20-year high school reunion, and I had a blast! We had a wine-tasting at a local winery, a lunch at the high school with some of our old teachers, and a dinner and dance. One of the highlights of the weekend, though, came after the official festivities ended. My friend, Stacie, invited our group of girlfriends over to her house for Sunday brunch.See less

(11/13/10) 1. Prepare brownie mix in a 9 13-inch pan according to the "cake-style" directions on the box. If your mix doesn't have a cake-style recipe, use an additional egg when preparing. 2. Trim edges off all four sides of the brownie sheet to ensure they are straight, then cut the brownie just a little bit off center vertically. Cut the smaller of the two pieces in half, vertically, to make two strips. Divide each strip into thirds, horizontally, for a total of six big squares. Cut the remaining portion of the brownie in half horizontally. Divide one section in half again, horizontally, to make two strips. Cut each strip into fourths for a total of eight rectangles (you'll only need six). Divide the remaining section in half, vertically, and cut one of the pieces in half, vertically, into two strips. Divide each strip into thirds to create six small squares; save scraps for snacking. Place brownie pieces on a baking sheet and freeze for 2 hours. 3. On a sheet of wax paper, roll out three...See less

(08/26/10) My granny always had so much leftover zucchini in her garden, it was a challenge to use it all. I invented this recipe when she gifted me a huge bag of zucchini one summer fresh from her garden. Zucchini is very high in water and fiber content. It’s the perfect way to moisten brownies without adding extra fat and get extra fiber in your diet.See less

(02/19/11) Better than being around a campfire! Now don't get me wrong, I think making s'mores around the campfire can be a ton of fun, but why go through the hassle of planning a camping trip or finding firewood if you can bake up a batch of these beauties without all the trouble. I saw this recipe on Baking Bites and could not wait to make them. I followed her recipe with the exception of using dark chocolate instead of milk chocolate and they were amazing! I brought these into work on a Sunday when there were only 7 of us there (I am an auditor so I often work weekends) and by Monday morning there was only one left. These are definitely going to be a "go-to" dessert going forward. S'more Cookie Bars 1/2 cup butter, room temperature 1/4 cup brown sugar 1/2 cup sugar 1 large egg 1 tsp vanilla extract 1 1/3 cups all purpose flour 3/4 cup graham cracker crumbs (approximately 7 full graham crackers) 1 tsp baking powder 1/4 tsp salt 2 super-sized (5 oz.) dark chocolate bars (e.g. Hershey’s) 1 1/2...See less
