For long-brewing teas without tannins, the tea is poured direcly into the flask, hotwater is added and then the filter and lid are replaced. When the tea is poured, the filter automatically strains off the tea and the tip-lid automatically opens at the drip-free spout. With teas containing tannin or green teas, where continued exposure to the water leads to a bitter or "stewed" taste, the tea is placed inside the filter. Water is added, and after the brewing period the plunger is depressed. This seals the tea inside the filter, stopping the brewing process and allowing multiple cups to be poured without a decline in quality. Brilliant!
