Taken from a children's story and recipe book, this recipe is sure to entertain and satisfy sweet and crunchy cravings.
Ingredients:
1 ripe pear, cored and sliced
1/4 cup sliced almonds
1/2 of a pomegranate (or 1/2 cup red raspberries)
6 whole lettuce leaves such as red leaf or green leaf, Boston or romaine
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 teaspoon honey
Salt & Pepper
1 large sealable plastic storage bag
Directions
Place pear slices and almonds in sealable storage bag and set aside. Remove red seeds from pomegranate (an easy way to do this is in a bowl of cold water; the white will float and the seeds you want will sink to the bottom as you gently break the fruit apart). Remove the red seeds from the water and add them to the bag with the pears and almonds, discarding the white part of the pomegranate. Tear two of the lettuce leaves... See less
