from gresgal & her notes: Making these to bring to my mom's house today for our Mother's Day celebration. The kiddies will be eating these while the adults eat the Apple Frangipane Galettes I made. I opted to make a lime buttercream frosting instead of the lime powdered sugar mixture they have in this recipe. The buttercream recipe I used was: 2 egg whites 1/3 cup + 1 TBSP granulated sugar 4 oz (1/2 a stick) of unsalted butter cut into slices In a medium bowl, whisk egg whites and sugar together until they're foamy. Place the bowl over a pot of boiling water (this is a makeshift double boiler method). Whisk occasionally until the sugar is dissolved in the egg. Remove from heat and whip egg mixture with an electric mixer until it is stiff and shiny (about 3-5 minutes). Add butter 1 slice at a time and incorporate completely before adding the next slice. Once all the butter has been mixed in, add your color and flavoring. I used the zest of 1-1/2 limes, the juice of 2 limes, and 3 drops of green food coloring. This gave the frosting a really yummy zing and a pretty light green color. The cupcake recipe made a dozen normal sized cupcakes plus an additional dozen mini cupcakes (I didn't have a giant cupcake pan). I only made the mini cupcakes because I didn't have another regular sized pan, otherwise it probably would have made 16 regular sized cupcakes.
