I am trying to put together a list of options for healthy "cakes" to serve Serenity on her first birthday.  If you have any ideas, please share. I think I served Julian a fruit pastery.

Here is the list I have compiled so far.  BTW-the older (non-baby) of the guests will have the sugary cakes we all enjoy eating at birthday parties.
Pumpkin Apple Harvest Cake

INGREDIENTS

1 cup cooked or canned pumpkin puree
2 large eggs, beaten
3/4 cup organic sugar
3/4 cup unbleached all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup chopped apple
1/2 cup chopped walnuts or pecans
Whipped cream or confectioners’ sugar for topping (optional)

1. Preheat oven to 325F. Prepare an 8-inch round cake pan by greasing and flouring it.
2. Combine pumpkin, eggs, and sugar in a large mixing bowl. Add flour, cinnamon, baking powder, ginger, and salt, stirring to combine. Add apples and nuts, stirring again. Pour mixture into prepared pan.
3. Bake 20 to 25 minutes, until a cake tester inserted in the middle comes out clean.
4. Cool the cake, still in the pan, on a wire rack for 10 minutes, then invert the cake onto the rack, remove pan, and cool cake completely.
5. When ready to serve, turn cake on to a pretty plate and top with whipped cream or confectioners’ sugar, if desired, or serve plain.

ps. If you make the cake, smooth it out when you put it in the pan as pumkin makes it bake in whatever shape it goes in there with.  Guests loved the cake, BabyG did...I frosted it by whipping heavy cream with a little sugar and cream cheese.

Today was my son's first day of school Here he is all decked out in his new school clothes. He had two choices of backpack, the yellow one with his name on it, or the brown and black one with the DJ on it. He chose the yellow one. I love this boy! It was so hard to see him ride away in that big yellow bus!
He was happy to go and meet new friends and learn to read!  I hope he is not too disappointed if he does not know how to read when he comes home tonight.

Last night after I woke up at 1 AM and stayed awake for an hour, I began to wonder if it was really wise of us to sell our second vehicle.
I sure thought so at the time.  We would save the car payments, the upkeep costs, the auto insurance, the licensing fees and the fuel charges.
I assured my husband it would be no trouble for me to get the kids up and get in the car with him to take him to work on time every day. Hey, that way we would actually have a start time to our day.

Fast forward to one...or is it two?..months later. He is now working one earlier every morning.  This means we have to be out of the house by 5:30AM. Eeeek! I know the 5 year old is not going back to sleep, and here I am, up at 1 AM? How will I function?
This is when the idea of buying a horse as a second mode of transportation popped into my head. Don't all of our best ideas come in the middle of the night?  Consider this one for a moment, and it is ok if you laugh while you do so.
The horse would need to eat, right? Lawn = grass, grass= food ergo, horse=completely environmentally friendly lawnmower! With the added bonus of then fertilizing the lawn. How perfect is that?
A horse would also help me with my goal of getting the family on a regular exercise routine. I mean, when we look in the backyard and see our horse, won't we want to saddle him up and go for a ride? Seems perfect!
Except, as I said, our backyard. We live in the city. I don't think the neighbors would look well on us for having a horse in the neighborhood. Perhaps I could convince them of the free fertilization benefit of the whole idea.
Then there is the actual transportation idea, can he really ride a horse 7 miles each way to work every day? Once he gets there, what will he do with the horse? He suggested he might have it fertilize the boss' car. I couldn't use the horse; after all, I have two kids to transport as well.
The last consideration is the initial outlay and the cost of upkeep for the horse. My husband wants to spend about $2k on a second car. I think could manage a horse for that.  I have no idea what vet bills and horse shoes cost, but can it really be more than oil changes, engine tune ups and new tires?
Tomorrow I want the car to take the kids to the Children' Museum and he wants to b in by 5AM, this means that I will be leaving the house in 4 hours and 21 minutes to take him to work, and here I sit typing away at the computer.
What do you think? Should we get a horse, or another car?
Perhaps we could get a big goat.<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

After months of searching for the perfect items to create a room of peace and tranquility in our home, I have finally managed to put together the perfect list. Now we just need to start saving up to create this wonderful space.
Perhaps we will reclaim the master bedroom as our retreat room after all.

We had so much fun with these Mommy and me photos.
  • Baby clothes are Koala Baby purchased from Babiesrus for $10 from the clearance rack (what a find!).
  • Mom's shirt is Motherwear purchased on line on sale for $16. It is a nursing top that looks great and functions beautifully!
  • Mom's pants are comfortable NY&CO yoga style knit pants that flex with an ever changing body.  Found on the sale rack for $15.
  • The shoes in the first photo were a gift from a boyfriend long since out of the picture, so I have no idea of the cost. The brand is Femme Fetiche, very sexy, super uncomfortable.
  • The shoes in the second photo are Bass brand purchased at my favorite shoe store, DSW, on sale (of course) for about $20. They are quite comfortable!
  • The little pink blanket on the back of the rocker is branded Blankets & Beyond, and was discovered at Tuesday Morning (great store for interestig finds!).
  • The rocker looks like one found at Cracker Barrel, but was actually discovered at a yard sale last summer for $20.
  • The camera used for the photo shoot is a Canon Power Shot SD750 Digital Elph found for $100 last year at Fry's (another sale, came with a free epson printer and memory card). I set the timer to 10 seconds and took these photos in my studio...or backyard as it is known by everyone else.
