Ingredients * 2 cups cashews * 2 tablespoons butter * salt, to taste (optional) Directions 1. 1 With metal blade in food processor, place cashews in bowl of processor. 2. 2 Process, turning on and off rapidly, until cashews are finely ground. Add butter and salt; process until smooth. Taste and add salt, if desired. 3. 3 Note:. 4. 4 If using roasted salted cashews, you may not need to add any salt. To begin with, taste and add a little at a time, until you reach desired saltiness. If using raw or unsalted cashews, add about 1/4 teaspoons salt after processing. Taste, and adjust salt to taste.

(optional) Submit Cancel Ingredients * 450 g unsalted cashews * 2 tablespoons honey * 2 tablespoons olive oil * 2 teaspoons flaked sea salt * 1 teaspoon cayenne pepper Directions 1. 1 Preheat oven to 180.C. 2. 2 Line a baking tray with non-stick baking paper. 3. 3 Combine last 4 ingredients and pour over cashews, toss to coat. 4. 4 Spread the cashew mixture over the lined tray and bake for 8-10 mins, stirring once, or until golden. 5. 5 Set aside to cool & store in an airtight container.

These were delicious and too damn addictive. I didn't have cayenne pepper so I used chilli flakes and some smoked hot paprika instead.

Ingredients * 1 egg white * 2 1/2 cups cashews * 1 tablespoon ground cumin * 1 teaspoon chili powder * 1/2 teaspoon ground ginger * 1/2 teaspoon cayenne pepper * 2 teaspoons sugar * 2 teaspoons kosher salt * vegetable oil cooking spray Directions 1. 1 Preheat oven to 300 degrees F (150 C). 2. 2 Line a baking sheet with foil and spray with vegetable oil. 3. 3 In a medium bowl, whip the egg white with a few drops of water until frothy. 4. 4 Add the nuts to the egg white and toss to mix. 5. 5 Use a slotted spoon to transfer the nuts to a clean large bowl. 6. 6 Mix the spices together in a small bowl and then sprinkle on top of the nuts and toss to coat. 7. 7 Spread the nut mixture in one layer on the baking sheet. 8. 8 Bake, shaking or stirring once, to make sure they toast evenly, 25-35 minutes, until they are crisp and browned. 9. 9 Transfer the nuts to another cool flat surface to cool and crisp.
