She lead him to the garden where a canopy shaded the hot sun. She poured him a glass of Ritinitis Nobilis retsina ($5), that ancient white wine flavored with pine resin. Knowing that the resinous flavor can be an acquired taste, she gave him a sideways glance as he drained the entire glass. Obviously the flavor appealed to him. She poured him another glass and one for herself. She told him the legend of retsina: Centuries ago when the conquering Romans attempted to destroy the Greek wine by throwing pine needles into the vats. In the past several years, the stretch between Plumas Street and Arlington Avenue has had a makeover as the hippest block in town. Deux Gros Nez and the Cheese Board have long claimed residence, but then the purple-painted Yoga Shack came along, and HighSocieTea, and you’ve got Metro Salon and Satellite bar holding down one end of the street while the Chocolate Bar anchors the other end. The Silver Peak's brews come out of our 15-barrel brewhouse that produces 310 gallons, or 2480 pints of beer per batch. The brewery is split into two levels. Behind the bar glass we have the brewhouse, at the same level with the restaurant; the cellar style serving room lies directly underneath. We craft both ales and lagers. Ales are top fermenting beers that tend to have a more robust flavor and be more aromatic. Lagers are bottom-fermenting beers thought to be smoother and more refined. Both are popular styles of beer and neither should be considered above the other. Each style has its time and place, especially at a restaurant with a wide variety of dishes. So far, we've produced about 20 different styles of beer. Our house brews, the Red Roadster, XXX Blonde, Baileywheat Hefeweizen, Peavine Porter and Silver Peak IPA, are all ales.
