Tagines, whose name refers both to rich North African stews and the vessels used to prepare them, are among the best loved of all Moroccan dishes. Le Creuset’s classic tagine features an enameled cast-iron base to promote efficient searing and browning. The conical stoneware lid fits snugly inside the base to circulate heat and moisture during the long cooking period. Vapors condense on the tall, sloping interior walls of the lid, continuously basting the stew to intensify its flavors and ensure moist, tender results.
