Marshmallows Recipe By the famous French Laundry Cookbook by Thomas Keller (Artisan) I N G R E D I E N T S 3 envelopes of Knox gelatin 1/2 cup cold water 2 cups granulated sugar 2/3 cups corn syrup 1/4 cup water 1/4 teaspoon salt 1 tablespoon vanilla extract Confectioners' sugar for dredging I N S T R U C T I O N S In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for 10 minutes. Combine sugar, corn syrup, and 1/4 cup water in a small saucepan. Bring to a boil and boil hard for 1 minute. Pour boiling syrup into gelatin and mix at high speed. Add the salt and beat for 12 minutes. Add vanilla and incorporate into mixture. Scrape into a 9 x 9-inch pan lined with oiled plastic wrap and spread evenly. (Note: Lightly oil hands and spatula or bowl scraper). After pouring marshmallow mixture into the pan, take another piece of plastic wrap and press mixture into the pan. I can still see her in my mind as she showed me (as if every 4 year old should know how to make jam) how to tell when the jam was done by the way it dripped off the spoon. Extra good cooking (and baking) was an everyday occurrence as I was growing up. But without a doubt my sister and 5 brothers were accustomed to good cooking and baking. We all agree the best of the best were the Cinnamon Rolls our Grandmother made, no matter what, every Saturday morning of her life. For cold symptoms add 1 t. butter to pot. HERBATA Z SOKIEM MALINOWYM (tea & raspberry syrup): Sweeten each glass or cup of hot tea with 1-2 T. pure raspberry syrup. This is a traditional cold and flu remedy. Other fruit syrups (cherry, strawberry, etc.) may be used but lack the medicinal properties of raspberry. For added potency, add 1/2 - 1 jigger vodka to each serving. That's because meat is expensive and beans aren't. Beans provide lots of good protein for growing children and hard working adults. When beans are combined with certain other foods their protein increases. The amino acids in grains like flour, pasta and cornmeal or milk products cooperate with the amino acids in the beans to make an extremely high quality protein. Don't worry about the lack of meat, there is more protein in this menu than you can shake an expensive protein bar at. The milk may seem overpriced to some, but it is vital for growing children and mom's who are pregnant, nursing or who may become pregnant.
