Fazenda Pindaibas, owned by Jos� Astor Baggio, is located 3,000 feet above sea-level in the southeastern region of Minas Gerais, Brazil's premiere coffee growing region for Arabica Catuai variety. The Baggio family tradition of growing coffee dates back to 1886 when they first emigrated from Italy. They started growing coffee in the states of S�o Paulo and Parana, then decided to grow specialty coffee in the fertile soil and excellent climate of Minas Gerais. Their coffee is cultivated to achieve the highest quality.The timing of harvesting is crucial to maximize the quantity of red beans or �Cherry Beans� which produce Gold and Platinum quality coffees. The separation of cherry beans and green beans is essential to guarantee excellence. As soon as the cherry beans are picked, they are washed with spring water and peeled. The beans are spread on the terrace in thin layers and dried by the sun, turned many times a day until perfected. Brazil's wonderful Arabica coffee is known for its mild, smooth flavor; rich, medium body; and complex intense aroma with hints of dry, spicy sweetness.
