My chicken noodle soup is really easy to throw together. Chicken stock, chicken pieces (I pulled chicken off the whole chicken I cooked to make the stock), celery, carrots, onion (I didn't have another onion, but I did have leek), and homemade noodles. I made the homemade noodles using flour, eggs, water, and oil, then cooked them in a seperate pot of water. Once cooked I added them to the pot of soup. If you just add them to the soup, the flour from the noodles can thicken the soup and make it more stew like and I definitely didn't want that. Posted by gregsgal at 11:06 AM on 11/10/09 Report Spam
I used this recipe over the weekend to make chicken stock for a pot of homemade chicken noodle soup. My only problem with it is that there wasn't any salt added to it so it was really quite fragrant, but there wasn't a whole lot of flavor. I couldn't tell you how much salt I added because I did it to taste. It wasn't a whole lot - maybe a tablespoon or so? - I have no idea. Posted by gregsgal at 11:04 AM on 11/10/09 Report Spam
