Serves 4 You need: Ingredients: 500 g Packet Green Tea Soba Noodles Cook Noodles in boiling water like spaghetti, adding about half a cup of water at regular intervals.Noodles should be cooked right through not al dente. This should take about 4 minutes. When cooked, drain the noodles and wash in cold water. Lightly toss in vegetable oil and store in the fridge until served. Dressing: 3 Shallots finely chopped 100 ml Rice vinegar 100 ml Vegetable oil 80 ml Dark Soy 180 Dashi * Zest of 3 small lemons finely chopped Wasabi* (Japanese Horseradish) to taste Method: Combine Ingredients in a bowl Accompaniments: 2 tbs Japanese Pickled Ginger 2 small Avocadoes 2 tsp wasabi 1 tsp Black Sesame Seed Assembling the Dish: Toss the cooked and drained noodles gently in the dressing. Place on a large platter or on individual serving plates. Garnish with thin slices of peeled avocadoes, pickled ginger, wasabi and sesame seeds.
