Broccoli. Broccoli is good. Broccoli is real, real good. And don’t kill me, but I think frozen peas are just peachy. Wash/rinse all the veggies. Then slice the asparagus into small pieces, avoiding the tough areas around the bottom. Set the asparagus aside. Then cut the broccoli into very small pieces. I love green vegetables. LOVE them. They make me happy. Now. Cut the zucchini into fourths lengthwise. Then rotate the slices 90 degrees and cut them into smaller pieces. Grab some garlic and chop it up. Go ahead and throw in the pasta. I like these medium-size shells, but any short pasta like penne will do. Slice 2 or 3 green onions until you reach the darkest green. Then you can stop and take a rest. You’ve been working really, really hard. Next, grab some ricotta cheese. Whole milk, please. The fat free stuff represents everything that’s wrong with the world. Dump it into a bowl. Crack in a couple of eggs… 1/2 teaspoon salt… And plenty of black pepper. Then stir it all together until it’s totally combined. Grate a whole bunch of Parmesan cheese. Like, 1 big, whopping cup of the stuff.
