Every watch "Semi-Homemade with Sandra Lee" on the Food Network? I find it simultaneously fascinating and creepy. Fascinating, because I'm a sucker for kitchen shortcuts. Creepy, because I am familiar with the artery-clogging ingredients in many of the convenience foods and mixes that Sandra uses. [Plus, her obsessively themed table settings and Stepford Wife-esque delivery always weirds me out.] This semi-homemade strawberry pie relies on healthier ingredients and takes just 10 minutes to put together. If you don't have strawberries on hand, you could use just about any other kind of berry or fruit. It tastes better the day you make it. But it's so light and tasty, especially for dessert on a hot summer night, that I don't think you'll have any problem finishing it up. Semi-Homemade Strawberry Pie * 1 pre-made vegan pie crust [Chocolate or graham] * 1/4-1/2 cup of dark chocolate chips or buttons * About 1 cup of strawberries, preferably organic, stems removed * 1/4 cup silken tofu * 3 heaping T confectioners sugar * A few drops of vanilla * 1/4-1/2 cup apricot or strawberry jam Serves 6 In a glass dish, melt the chocolate in the microwave at 50% power for about 1-2 minutes, or until smooth and creamy. Gently spread the chocolate onto the bottom of the pie crust. [Besides adding flavor, this "seals" the crust and helps prevent it from getting soggy.] Put in the freezer until it hardens--about 10 minutes. Using a food processor or an immersion blender, mix the tofu, sugar and vanilla until smooth and creamy. Spread this over the chocolate layer. [This acts as a "glue" to hold the berries in place.] Arrange the berries on the cream layer. Microwave the jam on high for about 30 seconds, then brush it over the fruit. [This will keep the fruit from drying out or turning colors.] Refrigerate for at least an hour before eating.
